Have you guys heard of Buddha Bowls? They are literally the easiest dinner and will satisfy EVERYONE around the table because they can choose what goes on them. We have made these for years and called them refrigerator bowls because we just pull everything out of the fridge and pile them up. You just need a few basics on hand that you can pick up at your local grocery store. Grab some protein (I like to do fully cooked frozen chicken to keep it easy) and whatever you have on hand! Then be sure to have a selection of delicious salad dressings and sauces.
My doctor told me I needed to start making more dinners at home that had protein and veggies and heart-healthy fats. This is where the Buddha bowl comes in. I am so busy all the time these days, that if I don’t have dinner I can throw together in minutes, it’s going to be take-out, cold cereal or leftover holiday candy. With Buddha Bowls, you can prep a bunch of stuff and then eat it all week for lunches and dinners, and always make it a little different!

When I cook, we always have leftovers. My kids are bird eaters, and I am trying to keep my portions smaller. I HATE letting leftovers go to waste. If I have a bunch of veggies cut up and ready to throw over a bowl of rice with some delicious chicken and dressing, then I will definitely go for that over the candy bar any day. It just makes eating healthier easier if you have all the ingredients there ready to go.
One of my kid’s favorite thing to do is to heat up a tortilla and then put all the ingredients into a wrap for lunches. I love seeing my kids eat better and not complain when dinner isn’t covered in maple syrup! (Are my kids the only ones who beg for pancakes and waffles 7 nights a week?)
Do you know what else is fun about a Buddha bowl? Eating them with chopsticks! Anytime we can eat our dinner with chopsticks we will, my kids all have the helpers that you put on the sticks but are getting more adept at using them since we do it so much. It’s fun to see them learn this fun skill.
