It’s been awhile since I’ve posted a recipe, so I decided if I am going to take that long between posts…it had better be worth the wait! And OH MY STARS these are the worth the wait. You will have your socks knocked off, you will have marriage proposals, you will want to make and freeze batches of these and hoard them all to yourself. At least that is my own personal experience. I am completely sockless right now. 😉 First of all these chewy, delicious, delectable coconut chocolate chip cookie butter bars have no flour in them. That’s right, you gluten free friends can enjoy without gut wrenching pain afterwards. (You will need to sub straight peanut butter for the cookie butter if you are highly sensitive or celiac, but I’ve had them both ways and they are both equally delicious).
They are all oats and butters and deliciousness. I am telling you, these things are the bomb.
I made them for a few friends this week and they were all wanting to kiss me on the mouth, and I was like “No you psycho! It’s a cookie, and I am happily married, as are you, take these loving feelings home to your husband and get off me!” I have passionate friends when it comes to delicious desserts…I’m pretty sure that’s why we are friends. Sometimes when I sneak one of these into my craft room while I am working and close the door, I almost feel like I am cheating on my husband I’m so in love. And if the windows are open, I’m sure my neighbors think I am too with all the sounds and exclamations I am making. “Yum!” “Oh my word that’s good!” “I want more!” Obscene I tell you.
Well, I may have now oversold them, but I don’t know if that’s possible. If you like coconut, oatmeal cookies, chocolate chip cookies, salted anything and good things…you will like these. Now go make them and be obscene with me.
