This is hands down one of my very most favorite salads to munch on any time of year, but it is especially yummy in these hot summertime months. Sometimes I buy kits for these at the store, but it is nearly as easy to just make it yourself…and then you can decide what you put inside.
The ingredient list is simple, cabbage, dressing you can easily make yourself or store buy, some mandarin oranges, crispy chow mein noodles, maybe some shredded carrots and romaine then of course your grilled chicken breast strips. I use these Foster Farms® Refrigerated Grilled Chicken Strips. They are a ready source of protein, which I appreciate because I have to add protein to every meal or I feelyucky…a fun side effect of gestational diabetes with my last pregnancy.They are available to purchase on the West Coast here in Oregon and other surrounding states at Walmart and select retailers. They don’t have any added steroids or hormones, and they taste good. I love having these on hand for quick meals like this one.
This is one of my favorite salads to whip up before a potluck or a girls’ night, it is always gobbled up quick. Something about that sesame flavor, the crunch of the cabbage and noodles, the sweetness of the mandarin oranges and the delicious chicken, they all marry together to just the right amount of happy little taste explosions.
If you don’t want to take the time to shred cabbage (it’s really simple with a good knife or a food processor), you can also buy one of those bags of pre-shredded cabbage. Even if I purchase a ready-to-eat kit, I still add the chicken and oranges…it goes from a yummy salad to a full on meal…which means I get to eat more without guilt! 😉
