Honeycomb’s big. Yeah, yeah, yeah! I am a big fat freaking fan of Honeycomb cereal. Always have been. Always will be. From their catchy jingles to their BIG honey taste, I am not afraid to admit that even as a grown adult woman, I still like to have little plastic baggies of Honeycomb to snack on when the occasion warrants. No denial.
Honeycomb is celebrating 50 awesome years, and asked me to create a recipe using those honeycomb shaped delicious morsels. My mind went immediately to Honeycomb cookies because I LUUURRRVE cereal in cookies. It makes all the difference!
I was tempted to just do my old standby of chocolate chip cookies and toss in some crushed cereal, but then I thought I wanted a GOOD honey cookie. You know the kind. Chewy and sweet and all kinds of delicious. Yeah this fits the bill.
I added a little bit of oats too, they give it a little more chewiness and texture. Also it helps keep the cookie together.
The honeycomb on top is not necessary, but it makes it a little more fun and I’m all about fun. These would be great at a Winnie the Pooh party, or You are the Bee’s Knees Party, or…I like honey party. They have those right? If not, we should have one. You’re all invited okay?
Just make sure that you set a timer on your phone and not just your oven if you leave the area, because it will make it sad if you burn a whole batch of these after your kids ate all the non-burned ones. I don’t know this from experience…okay that was a lie. I do know that from experience. It was very, very sad. 🙁
Everything else about this experience was happy though, and I will be making these again.
