A while back I decided it was time to get healthy. This was about 3 years ago. I went a little overboard. I ate a strict paleo diet, I exercised hard core…and I’m not going to lie, I looked pretty darn good. The downside? My family and friends all thought I was crazy, and I was totally judging them every time I saw them reach for anything with refined sugar or flour. I absolutely knew that I was right and everyone else was wrong. Let’s just say that I wasn’t super popular with my husband, kids or friends for awhile. They thought I was a self righteous snob. I was. I absolutely was.
Do you want to know what it was that snapped me out of it? Beignets.
We were headed to Disneyland in the spring and I realized I needed to eat a beignet. Those little Mickey Mouse shaped, soft, warm, sweet and delicious bites of heaven are my absolute favorite! I couldn’t go all the way there and NOT have beignets. Sooo I had to start reintroducing things to my gut slowly so that I would be able to eat them and not be sick while at the park.
I was able to get my body to be able to handle gluten again, and small amounts of dairy without feeling like I was going to die. I was able to enjoy Disneyland very much. I was able to eat ice cream on Main street, and the Monte Cristo in New Orleans Square, and Dole Pineapple whips by the Tiki room, and yes oh yes beignets at the Mint Julep bar. Sigh. I do so love that place! And now I’m not a self righteous snob anymore. I am now a heavier, happier, more loveable person…with a lot more to love. 😉
Now it’s just a matter of trying to find a good balance of eating healthy and eating delicious. Ahh the real struggle.
Now the point of all of this is that beignets are fantastic, and you can make your own and it’s not even hard! You could even cut them into cute Mickey Mouse shapes if you want! Then you’ll want to put on a Smiffys fancy dress and party like it’s Mardi Gras! Now this is my fried scone recipe too, but I just make them bigger if I want those…but usually I don’t. I want these.
