As a lot of my long time readers know I went through two whole years of eating a gluten free diet. My gut was just not happy and I needed to get rid of all the gluten that was gumming it up. I have since reintroduced gluten into my diet, but sometimes I still have problems with it, and some foods just really don’t work so well at all…like plain white bread. Shudder!
One of the things I missed the most while eating gluten free was flour tortillas. I LOVE Mexican food, and while I like corn tortillas just fine and was able to still enjoy it, I sometimes really missed a good quesadilla or burrito! They all tried them and couldn’t tell me anything different at all, even my husband who was sure they would be disgusting. 🙂 He gobbled them right up, and said they were perfect! YAY! The only noticeable difference was that the gluten free ones were a bit thinner, but taste wise nothing was sacrificed.

Buffalo Bleu Cheese Quesadillas
I’m a fan of Buffalo Chicken and Bleu Cheese anything, so this was a natural choice for me. We gobbled these up and there were no leftovers in sight! I mean can you go wrong with buffalo bleu chicken and melty, gooey mozzarella cheese between two perfectly made tortillas cooked to just the right level of crispiness? The answer is no. No you cannot go wrong.
I used my favorite hot sauce and dressing, but feel free to substitute your own favorites! Every Tuesday we have #tacotuesday, and I try to mix it up with different things so that we aren’t doing the normal ground beef and toppings week after week. These will definitely be making it into the rotation!
