Toffee Chunk Brownie Cookies

 

I made a resolution this month.
I know it’s April… what can I say?
Sometimes it takes me 4 months to come up with my goals for the year…
I want to bake from Cook Books more often.
Let me explain:
If you’ve visited my blog, Something Swanky, you know that I’m kind of an experimental baker.
I like to mix recipes up– cakes become cookies, and cookies become pies, and pies become dips.

It’s all well and good, and lots of fun.
But I just realized that I don’t haveanyold fashioned, tried and true, Betty-Crocker-gold-standard on my blog.
I’ve got them in my favorite recipe books that I use when I’m baking for my family.
But not on my blog.
So I asked myself: why not bake them for you??
Starting with this recipe, I’m makin’ an honest woman out of myself!
This recipe came from one of my favorite cookie cook books: The Cookie Bible.

Toffee Chunk Brownie Cookies
The Cookie Bible, modified by Something Swanky
1 c. butter
4 oz. unsweetened chocolate
1 1/2 c. sugar
2 eggs
1 tbs. vanilla
3 c. all purpose flour
1/8 tsp. salt
1 1/2 c. Heath Chocolate Covered Toffee Bits
1. Preheat oven to 350
